What is burger steak?
Burger steak is essentially a seasoned beef patty that’s smothered with a rich and thick mushroom gravy. It’s hearty, comforting, and delicious when paired with a side of rice or vegetables!
There are many Filipino variations for this dish, some with different cooking methods and ingredients used. The best part is that this recipe is incredibly easily to customize.
Season the ground beef with whatever you prefer, but for the classic recipe we’re simply using garlic powder, onion powder, with a splash of soy sauce and Worcestershire sauce. All these flavors work perfectly together when we eventually cover the meat with the savory mushroom sauce. Yum.
A Jollibee classic
If you’ve ever been to Jollibee, then you might have already seen this classic and iconic meal on their menu boards. This was my grandma’s favorite and go-to meal every time we’d visit the fast food chain and it’s become incredibly nostalgic ever since.
For this version, we’re going to take it up a notch, by adding a bit more seasoning to the beef patties and flattening them out super thin to get a gorgeous crust on the outside.
We then top it off with our rich mushroom gravy, chopped scallions, and homemade crispy garlic chips for more of a textural and flavorful bite!
Ingredients for burger steak
Servings: 4 burger patties (6 oz each)
Beef patties:
- ~1 lb ground beef
- 3 tbsp bread crumbs
- 1 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
- 1 large egg
Mushroom gravy:
- 2 cups beef stock
- ~200-300 g mushrooms, sliced
- 2 garlic cloves, minced
- 2 tbsp flour
- 1 tsp dark soy sauce
- 1/2 tsp onion powder
- Salt and pepper, to taste
Instructions for burger steak
Prepare the burger patties by combining all the ingredients together in a bowl. Shape the patties into thin circular discs, weighing around 6 oz each.
Fry the burger patties on both sides for around 2-3 minutes, or until browned and cooked all the way through. Set aside.
In the same pan, add in the mushrooms. Cook the mushrooms down until they soften, about 5-8 minutes. Add in the garlic, and saute for 2 minutes until fragrant.
Add in the flour, stir and cook for an additional 2 minutes to remove the raw flour taste.
Pour in the beef stock and dark soy sauce. Season with onion powder, salt, and pepper to taste. Bring the mixture to a boil, then simmer on medium or 5-10 minutes, or until thickened to your desired consistency.
Pour over the fried burger patties and top with chopped green onions and crispy garlic chips. Enjoy!
Final Tips
- Mushrooms: feel free to use any mushroom of your choice for this recipe. While traditional Filipino burger steak tends to use canned mushrooms (which is typically more accessible and budget-friendly!), some of my favorite varieties to use include: cremini, shiitake, portobello, or white button.
- Ground beef: this is all up according to your preference. You can opt to use either regular ground beef or lean ground beef for this recipe. Either kind works, it just depends on how much fat content you prefer for the patties.
- If you’re looking to add some extra flavor to the burger patties and sauce, you can try adding in some herbs such as thyme, rosemary, or even basil. For a bit of spice, sprinkling in some chili flakes or cayenne pepper also work great in here! To make the sauce even richer, try adding in a splash of heavy cream.
