Crunchy Cereal French Toast

French toasts will never be the same after you try this crunchy twist on the old classic! Fluffy bread coated in a crispy cereal takes this breakfast (or dessert!) to the next level.

I’m sure by now you already have somewhat of an idea on how this cereal french toast is made, and you’re probably correct. This is such a straightforward recipe if you’re already familiar with how to make french toast in the first place!

If not, don’t worry, it’s as simple as dunking the bread into a batter, then immediately into cereal, and finally frying until crispy and golden. Boom. Crunchy french toasts.

What cereal is best?

Anything works! There’s such a wide variety of cereal choices out there, and I won’t stop you from choosing your favorites.

If you are, however, looking for a somewhat “blank slate” aka. a plain/standard crunchy french toast, try going for either corn flakes or rice crispies. They’re plain enough in flavor that you’ll still get that classic french toast taste, but crunchy enough for that added textural experience.

What about breads?

I personally love to use brioche. It’s perfectly fluffy and tender due to its high fat and egg content, while being sturdy enough to handle some batter (so it’s less likely to fall apart). Brioche is also mildly sweet on its own already so not only does it help satisfy my sweet tooth, but it compliments the batter and the cereal amazingly well.

My other favorite would have to be challah!

At the end of the day, use what you got. The beauty of this cereal french toast recipe is that once the bread is dipped in batter, then coated in cereal and pan-fried, it’s completely transformed into something delicious.

Ingredients

•Thick bread slices (brioche, challah, baguette, etc.)
•Cereal of choice, lightly crushed
•Unsalted butter, for frying

Batter:
•1 egg
•3 tbsp milk
•1 tbsp sugar
•1 tbsp flour
•1/4 tsp ground cinnamon
•1/4 tsp vanilla extract
•Pinch of salt

Instructions

  1. Prepare the batter by combining together the ingredients listed. Whisk until smooth.
  2. Dip each slice of bread into the batter, then cover in the crushed cereal until completely coated.
  3. Melt 1-2 tbsp of butter into a pan or griddle, then fry the french toasts for about 2-3 mins on each side, or until they’re crispy and golden.
  4. Serve warm and top with powdered sugar, fresh berries, and maple syrup, if desired!
