Easy 15-minute Peanut Noodles

These peanut noodles will become your new go-to recipe once you see just how easy it is to make! It requires basic ingredients that you probably already have in your pantry in order to make this irresistible peanut sauce.

Like with a bunch of my other recipes, this specific recipe holds a lot of memories to me. Don’t worry, this isn’t some sappy story about how this was a family-long secret passed down from generation to generation, it was actually quite sad.

Long story short, during my first year of university, I used up almost ALL my money from my campus card to eat in the food hall (yup, I was that hungry). So during the second semester, I ended up only eating 1 meal a day to last me to the end of that year before I flew back home.

Until I found a loophole! The food hall had a condiment stand where everyone was pretty much free to grab whatever and however many they wanted. And so I had a very genius idea to take some packets of peanut butter, sugar, and soy sauce, and stacked it up in my dorm.

Ramen noodles were also only a dollar per packet, so using the condiments that I saved, I was able to make the most delicious peanut butter ramen that topped almost everything that they served in the food hall!

Ever since I moved back home, I cut back a lot on how often I ate/made these noodles. And whenever I did, I’d always make some minor adjustments to further elevate the original recipe that I came up with in that dorm room.

Ingredients

•Noodles of choice (knife-cut, udon, ramen etc.)

Peanut sauce:
•3 tbsp peanut butter
•2-3 tbsp noodle water
•1 tbsp soy sauce
•1/2 tsp lime juice
•1/8 tsp ginger powder
•1/4 tsp garlic powder
•1 tsp chilli crisps
•1/2 tsp sesame oil
•1/2 tsp sugar

*Note: for the peanut butter, I used the extra-roasted kind. I honestly find this kind of peanut butter so much more tasty than the standard one because it’s got a nuttier, more richer flavor. That being said, if you only have the regular/standard one, don’t go out of your way to find the roasted one, it will still taste amazing either way!

Instructions

  1. Cook your choice of noodles and reserve some of the boiling liquid. Drain and set aside.
  2. Prepare the peanut sauce by combining all the ingredients until smooth. Pour the sauce over the cooked noodles and mix until combined. Adjust the consistency of the sauce with more or less water if desired.
  3. Top with green onions and sesame seeds.
