These overnight oats are quick, easy and perfect for meal-prepping breakfast or snack for the next day. This is flavored with ube, giving the oats a floral, earthy, and nutty taste!
Recipe Rundown
Ingredients
These overnight oats use whole rolled oats, coconut milk, honey for sweetness, and ube extract. You can top these off with slices of fresh banana, strawberries, toasted coconut for a bit of crunch, and condensed milk for added creaminess.
Where to buy ube extract?
You can purchase this in most Filipino stores, or sometimes in the international section of some Western groceries.
Instructions
Simply combine together the oats, coconut milk, honey, and ube extract in a bowl or mason jar and let it sit in your refrigerator for at least 8 hours to overnight! Top it off with fresh fruits of your choice and it’s ready to eat.
Quick Tips
The ratio of oats and milk that I used in this recipe yields a thick, chunky oat consistency. You can always add a splash of coconut milk, chia seeds, or greek yogurt if you’d like it to be slightly creamier!
These are somewhat similar to ube champorado, in consistency that is. These oats are thick, creamy, and made even better with the use of ube extract to give it that iconic purple color and taste.
I’m actually not a huge fan of oatmeal itself, but the overnight oat version was something I could vibe with. Maybe it was the fact these were cold and refreshing.

Instructions
In a bowl or mason jar, combine together the oats, coconut milk, honey, and ube extract. Mix well to combine.
Cover, and let refrigerate for at least 8 hours or overnight to allow the oats to soften and thicken.

In the meantime, toast your coconut flakes in a small dry pan over medium heat. Toast the flakes, stirring frequently, until the flakes are golden brown in color. Set aside.

After letting the oats sit, top with the sliced bananas, strawberries, and toasted coconut flakes. Drizzle a generous serving of condensed milk on top, to taste.

Ingredients and Substitutions
*The Recipe Card below includes all the full measurements for these ingredients!
Rolled oats: Like cooking oatmeal, the oats will soften in the milk overnight, making them thick and creamy.
Coconut milk: I find coconut milk works tremendously well with ube. Go for the ones specifically used for making drinks (the ones that come in the box), rather than the canned varieties which are much too thick and rich for this recipe.
- Substitutes: You can also use other milks of your choice such as standard cow’s milk, almond, cashew, rice, or soy.
Honey: Adjust the sweetness to your preference.
- Substitutes: Feel free to use other sweeteners such as white or brown sugar, agave, maple syrup, or condensed milk.
Ube extract: This will give that vibrant purple color and rich ube flavor to our oats.
- Substitutes: You may also use ube halaya (ube jam), though do note that these jams tend to come sweetened already so adjust the honey of this recipe accordingly.
Coconut flakes, banana, strawberry, condensed milk: These are just some of the few toppings you can add to the overnight oats. You can get creative by using other fruits such as mango, kiwi, or passionfruit.
Tips
Adjust the consistency of your overnight oats: This ratio of oats and milk that I used yields a thick, chunky oat consistency. You can add a splash of extra coconut milk if you’d like it to be slightly creamier!
Allow the oats to soak in the milk: Overnight oats only work if you let the oats soak up all that liquid! Give them at least 8 hours to thicken and soften in texture. This is great for meal-prepping breakfast the next day -simply make the oats the night before and it’ll be ready by the morning.

FAQs (Frequently Asked Questions)
What else can I add to the oats?
You may also add 1 tablespoon of chia seeds and/or 1/4 cup plain greek yogurt to the oats for a thicker, creamier consistency. Feel free to add more coconut milk if it ends up being slightly too thick to your preference.
What does ube taste like?
Ube has floral notes of vanilla, with a nutty, earthy taste. Its taste is further enhanced when sweetened, hence why it’s used in so many sweets and dessert recipes.
Where can I buy ube extract?
You can purchase this in most Filipino stores, or sometimes in the international section of some Western grocery stores.
How long do leftovers last?
Overnight oats can stay good for up to 4 days stored in an airtight container in the fridge. Don’t keep them any time longer or the oats will become too soft and mushy. I’d also recommend keeping the toppings separate until you’re ready to eat it in order to maintain their freshness and texture.
