What is ube pie?

Ube pie is one of the staple menu items from Jollibee, a Filipino fast food joint. The filling is made up of a sweet and creamy ube filling, encased in a light, flaky, and crispy fried pie dough.

Living in Canada, unfortunately it remains as a limited item only for certain parts of the year (why Jollibee??). It might actually be a blessing in disguise because otherwise I’d be visiting almost every other day to get myself one of these ube pies to satisfy my sweet tooth.

Ube Halaya

Ube halaya, aka. ube jam, is a Filipino spread made up of grated ube, sugar, milk, and sometimes coconut milk. It’s delicious on almost any pastry, as a filling, or even as a frosting for cakes.

Since this will make up the filling for our fried pies, I’d suggest either making yourself a good ol’ batch of halaya (trust me, it’s so much better homemade), or running to your closest Filipino store and grabbing yourself a jar of this stuff.

I’ve also been seeing it pop up recently in most Asian supermarkets, mainly in the Southeast Asian/Filipino section, so you can check those as well.

Make sure to go for Filipino brands that clearly state “halaya” in its label to get that really intense and authentic ube flavor.

Instructions for Ube Pie

Brush each of your 4×5″ pie dough rectangles with egg whites.

Spoon about 2 tbsps of the ube halaya onto the centre of the dough. Fold the top half over to the bottom, then seal the pie shut by crimping the edges with a fork.

Place your prepared pies on a parchment-lined baking tray to prevent sticking. Brush the tops with your prepared cornstarch glaze.

*Optional, but highly recommended: freeze the pies for at least 1 hour to firm up.

Once frozen, fry the pies for about 3-5 minutes, or until the outside is golden-brown and the pie dough is completely cooked.

Let cool slightly and serve warm. Enjoy!

FAQs

Can I use store-bought puff pastry/pie dough?

100% yes. For this recipe, I made a homemade pie dough from scratch just because I had lots of time on my hands. Otherwise, feel free to use the store-bought ones for conveniency.

Can I freeze the ube pies?

Ube pie freezes extremely well and can be kept for months in your freezer. There’s no need to let them thaw/defrost either, simply just throw them into hot oil and fry!

Why did my ube pie explode?

I’ve had this happen too many times. If you don’t seal the pies well enough, the filling can seep through the cracks and can react with the oil, causing the pie to unravel. Be sure to seal the edges tightly with a fork to ensure none of the filling escapes when frying.

  • 1 egg white, for sealing

  • Ube halaya (store-bought or homemade)

  • Cornstarch Glaze
  • 1 tsp cornstarch, dissolved with 1 tbsp cold water

Directions
